Yummy banana cake....courtesy nigella

I love the combination of banana and cake with loads of nuts.....browsed the web and short listed on nigella recipe. Well her recipes are usually bang on and difficult to mess up with.

Here it is mine with some changes. 

  • 100 grams sultanas
  • 175 grams plain flour
  • teaspoons baking powder
  • ½ teaspoon bicarbonate of soda
  • ½ teaspoon salt
  • 125 grams unsalted butter (melted)
  • 75 grams caster sugar
  • 3 small eggs
  • small very ripe bananas (mashed)
  • 60 grams chopped walnuts
  • teaspoon vanilla extract

Temperature- 170 c for about 60 minutes

 In a large bowl, mix the melted butter and sugar and beat until blended. Beat in the eggs one at a time, then the mashed bananas and vanilla. Then, stir in the walnuts, sultanas and vanilla extract. Add the flour mixture, a third at a time, stirring well after each bit. Bake it and enjoy!
